    Ramen isn't just soup straight from the pot and into your bowl. You'll often see a skilled ramen chef ladling in a tablespoon of this, a teaspoon of that, and a dash of something-or-other before finally going to the pot of simmering soup.     びぎ屋I was going to make some sort of list, the 10 ramen commandments, a tribute to my favorite Biggie track, but then I stopped. That would be too much work. And I just ate two bowls in the last two hours. I'll leave the fancy writing up to ramenate.com. Anyways, today's adventure takes me out to Gakugei Daigaku for the shoyu at Bigi.This spot was recommended by a bar owner at a cool place in Shimokitazawa, the 808 bar. Keizo, Nate, and I take all recomends seriously, and we settled in for 3 bowls.If commandment #7 is to keep your product and family separated, then they already failed.

    The latest release from a ramen collective by the name of Bond of Hearts. A lot of shops in Tokyo, though they are definitely not a chain, are part of some sort of group. This works out for the shops in a few ways. One of those is support from the ramen community. Just check out all the welcoming flower bouquets from other shops:Nagi has close ties. I was actually invited to this shop by Nishio-san, who runs Nishio Ramen, which is directly connected to Nagi.Ivan lent his support.     Here it is, adventure seekers. Easily in the top 5 for miso ramen in Tokyo. The rest of the Tokyo ramen blogging world had eaten and been impressed at this shop's showing at a rather unexpected Odaiba ramen fair, so it was on my list.With Ramen Nate, I took the train a few minutes down to Awajicho, in Tokyo's sporting goods shopping area.     Dropped into Ivan's to chat and try the new release. one thing I love about Ivan Ramen is that he is always experimenting with new ideas. The last one, the spicy Mexican inspired ramen was great. How's the latest?It's a "winter" chicken ramen. Creamy soup, flavored with honey and yuzu, with special rye noodles. The yuzu really sticks on your taste buds.I'd like to see what Ivan can do with the special rye noodles in the future. A pastrami on rye for the next Rosh Hashanah maybe? Hmmm...     I don’t often shill for web sites that sell instant ramen (though there are links off on the side for anyone in need), but this is a neat idea. It’s simple…and the picture above is pretty self-explanatory: you choose the size of the “Ramenbox,” fill it with your choice of instant ramen, pay a flat fee based on the Ramenbox size, and wait for the delivery guy!     Have you been to Wonton Forest? Have you heard of Sapporo-Ya? How about Yukino Ya Ramen. There must be some sort of bad luck associated with this place, because Yukino Ya is the 3rd restaurant to be at this location in the past year.     Suanne asks: Do you know if the chicken spice (packet) is sold separately from the noodles? If you do, where can I purchase this from? The closest I’ve ever been able to do is buying chicken bullion or beef bullion. I prefer to buy the powdered kind rather than the cubes so that I can control the amount. Has anyone found a way to buy ramen flavor packets or ramen seasoning?

    Please excuse the “meta”, I need to complain for a minute. There is a new type of comment spammer that I keep having to deal with here. Someone, a bot presumably, will post “Hey great post, I really liked it” and attach a URL. Now, I don’t display the URLs (unless that broke in an upgrade) so this is useless. But it means that I have to decide whether a “Hey nice job” is really Spam or not. The latest offender here is a shower enclosure company in the UK. They appear to be a legit business, not just a place you can buy Viagra, so I’m curious how…

    I found this gem in my box of unpublished recipes, it was from 2007. This recipe suggests a very interesting way to cook the ramen. I’d be curious to see a picture if anyone makes it.     Day 96:I planned on stopping by home before heading out to a local ramen-ya, but when I got home my nieces were still awake and wanted to play. So I decided to stay in and spend some quality time with them instead. We made funny faces, dressed up as princesses (well I didn't), and flew around the living room, screaming our heads off.     Day 95:I can't necessarily tell you why, but I had a good feeling about today. It was one of those days where someone actually followed through with their promise.     Day 94:Ever since my friend Paul closed down the Wonton Forest, I've been loosely searching for a comparable wonton to satisfy that yearning.         Chomoranma is an interesting new ramen shop/izakaya within easy walking distance of JR Ebisu Station. It's another example of the ramen/izakaya or men-sakaba trend. In fact this place writes "sakaba" right on their sign up above the entrance.      I don't review a lot of miso ramen shops since it is not one of my favorite types. I find it significantly saltier than other types of ramen and the smell is sometimes not to my liking, the way some people find the smell of certain tonkotsu ramen shops unpleasant. However since Junren is one of the oldest and most consistently-highest ranked miso ramen shops, and it came recommended by a Japanese coworker who is aware of my preferences w/r/t ramen styles, I decided to give it a try. I went on a weekday vacation day, early in the afternoon, so as to hopefully not encounter a long line.

     This style of broth is sometimes referred to as Tokyo tonkotsu. It's a flavor that seems to have a lot of tonkotsu and shio but not much shoyu. The pork as you can see from the pictures was excellent, really well cooked and falling apart. Lots of wakame and seaweed, almost a bit too much seaweed. Good home-make thin curly noodles, this is almost more like a Chinese soup with this style of ingredients. Omori chashu men was 1150 yen and definitely worth it.
